Quick and easy meals.

When I asked listeners what they wanted to hear about on #apodadayinmay a lot of requests to discuss food, diet and nutrition were sent in. I am now on the hunt for the right sort of expert to discuss things such as emotional eating, binge eating and the more complex issues around our diets and what we eat as it's a topic that deserves its own show and also the right person to contribute to the conversation.

In this episode though I'm answering the question about my favourite foods, meals and recipes with my Top 5 Easy meals...

Amelia Freer's Beef Curry.

Amelia Freer's Simple Prawn, Coconut and Aubergine Curry.

Eve Kalinik's Sweet Potato & Halloumi Warm Salad.

Eve Kalinik is also the nutritional therapist I saw when I was struggling with gut issues related to stress and anxiety. For her practice visit Eve Kalinik.

Amelia Freer's Lentil, Beetroot & Hazelnut Salad with Ginger Dressing.

Poached egg and avocado on toast - as described on the show.

The cook book I'm most excited about is Ian Haste's The 7-Day Basket: 1 Basket, 1 Week, 7 Meals. I love the idea of making your supermarket shop work for you and by choosing what to put in your basket based on the aisle, shelf-life and nourishment. As soon as I heard the idea I thought it was genius because I’ve never felt as though I’ve shopped well in the supermarket - always forgetting something, buying things I don’t need or not getting round to using something that then perishes and is wasted - so this sounds like the perfect solution.
